Grilled Fish Tacos

Fish (Bobby Flay):
1 pound white flaky fish (I used Tilapia)
1/4 cup canola oil
1 lime, juiced
1 tablespoons ancho chili powder
1 jalapeno, coarsely chopped
1/4 cup chopped fresh cilantro leaves

Preheat grill to medium-high heat. Place fish in a medium size dish. Whisk together the oil, lime juice, ancho, jalapeno, and cilantro and pour over the fish. Let marinate for 15 to 20 minutes.

Remove the fish from the marinade place onto a hot grill. Grill fish pieces until easily flaked with a fork, turning once, about 8 minutes.

Toppings:

Shredded Cabbage
Diced Red Onion

White Sauce (Hula Hut):
1 bunch fresh cilantro
2 Jalapeno peppers
1 teaspoon Minced garlic
1 teaspoon Olive oil
1 1/2 cup Ranch dressing
2 Limes

Put the jalapenos in a double thickness of tin foil and cover with olive oil and garlic. Roast on the grill (or in the oven) for about 15 minutes till cooked. Remove the seeds and membrane from the peppers and mince. In a small bowl put the dressing, peppers w/oil & garlic, and the juice of the 2 limes. Let set for the flavors to blend.

8 Flour or Corn Tortillas

Wrap the tortillas in aluminum foil and heat up on the grill. Top a tortilla with a portion of the fish, cabbage, red onions and the white sauce. Fold the tortilla in half and eat.

I also made a cantaloupe salsa to use as a topping instead of the items listed above.

Cantaloupe Salsa (smitten kitchen):
2 cups diced (1/4 inch) cantaloupe
1/4 cup diced (1/4 inch) red onion
2 tablespoons chopped fresh cilantro
1 jalapeno (skip the seeds if you want to dim the heat), minced
2 tablespoons fresh lime juice
1/4 teaspoon salt

Mix everything and eat immediately.

The Daily Chronicle: After first mistake, Huskies roll past Leathernecks

The opening-drive turnover was a little discouraging, and allowing Western Illinois to slice up its defense minutes later wasn’t pleasing either.

But after shaking out a few early jitters, the Northern Illinois football team got it together, and got it together in a pretty big way.

The Huskies, whose 14-point fourth-quarter rally fell short against the Badgers in a 28-20 loss, jumped out to a 28-7 halftime lead in their home opener against the Leathernecks before a crowd of 21,427. Chad Spann, whose two fourth-quarter touchdowns at Wisconsin created a stir, added three more against Western Illinois.

Getting offensive: Chad Spann scored three touchdowns for the Huskies, giving him five in two games this season.

On the defensive: Sean Progar recovered a fumble by Western Illinois receiver Lito Senatus to set up a third-quarter score.

The number: 117. The Huskies' Me'co Brown rushed for more than 100 yards for the second straight game.

They're still talking about: Brown's 60-yard run after he appeared to be stopped at the line of scrimmage.

Looking ahead: NIU is at Purdue on Saturday. Western Illinois hosts Stephen F. Austin.

"The score was a little misleading in terms of how we matched up physically. I feel like it wasn't as one-sided as the scoreboard appeared, but of course the game is judged on the scoreboard and based on that, we were definitively beaten tonight," Western Illinois head coach Don Patterson said.

The Chicago Tribune: Northern Illinois wary of Western Illinois

This Saturday night's home-opener against Western Illinois at Huskie Stadium will be another challenge for the NIU defensive unit that finished first in the Mid-American Conference last season.

Western Illinois quarterback Matt Barr completed 18 of 26 passes for 437 yards and three touchdowns in the Leathernecks' 35-28 opening victory at Sam Houston State

“I know we won’t have any trouble getting ready to play; the coaches or the kids,” said Kill, who was 6-1 with six straight victories over Western while coaching for Southern Illinois. “This is their chance, and they’re going to bring the house.”

The big play noted by Kill, a 47-yard run by tailback Me'co Brown, is one of the key issues heading into the Western Illinois home opener. Brown, a sophomore, injured his hand against the Badgers. His status for the home opener is in doubt.

"He practiced on Sunday," Kill said. "His hand was in a cast. I don't know how well he'll be able to secure the ball yet. But he was catching punts."
